Dossiers present and discuss relevant data on the production, distribution and consumption of oils and fats. The essays focus on specific topics, e.g. various kinds of oils and fats and their production, and are mostly based on texts deriving from a single archive or an otherwise well-defined historical situation. This format permits detailed studies and the Dossiers thus represent the very core of this Digital Data Collection.
